I experienced my first Coffee Omakase with Coffee by Jon over the weekend! The tasting featured 4 crafted courses with decreasing levels of caffeine- which was perfect, since I couldn't handle too much espresso in one day!
The 2nd course, a pineapple tonic, was my personal fav. It was refreshing, with a tropical twist that blended seamlessly with the coffee’s flavor. I am thinking to recreat it at home! The final course was a yuzu panna cotta. It leaned more on the yogurty side and wasn’t as silky as other panna cottas experienced elsewhere and the marmalade on top was quite intense to me.
I wish Jon had shared more about how he developed these ideas and the background story behind each creation. Overall, the tasting leaned heavily into fruity and citrusy notes, which became quite intense to me. But the hot herbal tea really helped at the end.
