I experienced my first Coffee Omakase with Coffee by Jon over the weekend! The tasting featured 4 crafted courses with decreasing levels of caffeine- which was perfect, since I couldn't handle too much espresso in one day! The 2nd course, a pineapple tonic, was my personal fav. It was refreshing, with a tropical twist that blended seamlessly with the coffee’s flavor. I am thinking to recreat it at home! The final course was a yuzu panna cotta. It leaned more on the yogurty side and wasn’t as silky as other panna cottas experienced elsewhere and the marmalade on top was quite intense to me. I wish Jon had shared more about how he developed these ideas and the background story behind each creation. Overall, the tasting leaned heavily into fruity and citrusy notes, which became quite intense to me. But the hot herbal tea really helped at the end. ☕️ I don’t usually wake up before noon on weekend but a 4 course coffee omakase helped make an exception. At Kona Coffee Roasters in Murray Hill, @CoffeebyJon will guide you through 4 courses centered on coffee as the ingredient. Each course is freshly made in front of you as Jon explains the ingredients and inspiration behind each dish. 🌺This omakase started off with a strong double shot of Kona Reserve, a single origin coffee from Hawaii to start off your journey. 🍍 I never thought citrus and coffee could work together but they work in harmony in the Pineapple Tonic, a refreshing drink pineapple granita and tonic water, topped with a shot of Kona Espresso and a pineapple chunk. It reminded me of the espresso lemonades that came into resurgence in the coffee scene of last year. 🍒 The cascara is the husk left of the coffee cherry after bean is extracted. It is from these husks that a tea is made for the following course to serve as a palate cleanser. 🍋 My favorite part was the finale, the Yuzu Panna Cotta. A callback to the tropical citrus flavor of the Pineapple Tonic earlier, this creamy Panna cotta is topped with a bright Yuzu jam. Lastly, you’re sent off with a rooibos tea to go along with a sample of homemade cascara syrup as a treat! What a bonus and great way to continue the rest of your spring weekend afternoon!
