I stopped by Ceres at 1:30pm to put my name down for a 5:30 pizza since they only make a limited number of doughs each day and it fills up fast. When I came back, there was already a line outside and a steady flow of people waiting for their turn.
Ceres is run by two chefs who’ve worked at Eleven Madison Park, Lilia, and Roberta’s, and it shows in the care they put into every detail. The menu is tight and focused with just a few seasonal sides and whole pizzas, no slices. I ordered the cheese pie, and it was incredible. The crust was blistered and chewy, and the sauce and cheese were in perfect balance.
It’s a little pricier at around $40 for a whole pie, but the quality makes it worth it. The space is small and walk-in only, but it feels like one of those classic New York spots....More
